Chocolate Walnut Cookies Recipe

Ingredients:

  • 1 ¹⁄8 cups all-purpose flour
  • 2 ¼ cups rolled oats
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ tablespoon light corn syrup
  • ¾ cup plus ¹⁄8 cup granulated sugar
  • ½ cup vegetable shortening
  • ¾ cup crunchy peanut butter
  • ¾ teaspoon vanilla extract
  • ¾ cup plus ¹⁄8 cup packed brown sugar
  • ¾ cup unsalted butter, softened
  • 2 eggs
  • ½ cup white chocolate chips
  • 1 cup chocolate chips
  • 1 cup chopped walnuts
  • ½ cup mint chocolate chunks, optional and ¹⁄3 cup M&M’s candies

Directions

Preheat oven to 350°F.

Mix together rolled oats, flour, baking soda, and salt in a bowl.  Then, beat butter, peanut butter, shortening, and corn syrup in a stand mixer on a high speed until fluffy and creamy. Add brown sugar, granulated sugar, and vanilla extract, and mix well.

Add eggs one and a time and mix. Add in flour mixture and beat on a low speed. Stir in white and milk chocolate chips, M&M’s, walnuts, and mint chocolate chunks.

Line a baking sheet with parchment paper. Drop the dough on the baking sheet to make cookies and bake for 12 to 17 minutes. Cool on baking sheets and then transfer to wire racks to cool completely.

Guilt-Free Cookies Recipes

Ingredients:

  • 1 can white beans or garbanzos, drained and rinsed
  • ½ cup quick oats
  • ¼ cup peanut butter
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¹⁄3 cup brown rice syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon baking soda
  • ¹⁄3 cup unsweetened baking chocolate and cut into chunks

Directions

Preheat oven to 350°F.

In a food processor blend all the ingredients, except the chocolate. Add in the chocolate.

Bake for eight to 10 minutes or until the cookies turn golden brown. Remove from the oven and let them cool.

Cupcakes with Cheesecake Centers

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1⁄8 teaspoons salt, divided
  • 2 cups water
  • 2⁄3 cup vegetable oil
  • 2 tablespoons white vinegar
  • 2 1⁄3 cup sugar, divided
  • 2⁄3 cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened and 1egg

Directions

Preheat the oven to 350°F.

In a large bowl, add the flour, cocoa powder, two cups sugar, baking soda, and a teaspoon salt. Add oil, water, vinegar, and vanilla and beat for two minutes.

Line the muffin cups with paper and pour the batter up to two-thirds of the way. Mix cream cheese, 1⁄3 cup sugar, egg, and 1⁄8 teaspoon salt until combined.

Spoon a tablespoon of this mixture onto the center of each cupcake. Bake for 20 to 25 minutes. Cool completely and serve.

Pecan-Pie Cupcakes Recipe

Ingredients:

  • 1 cup chopped pecans
  • 1 ⁄2 cup all-purpose flour
  • 2⁄3 cup butter, melted
  • 2 eggs
  • 1 cup packed brown sugar

Directions

Preheat oven to 350°F.

In a medium bowl mix all the ingredients. Grease muffin cups and pour the mixture in it.

Bake for about 18 minutes. Cool and serve.

Poppy Seed-Topped Semolina Cake With Coconut

Ingredients:

  • 1⁄2 cup canola oil, plus more for greasing
  • 2 1⁄4 cups semolina
  • 2 teaspoons kosher salt
  • 2 eggs, beaten
  • 2 1⁄2 cups coconut milk
  • 2 1⁄2 cups sugar
  • 1⁄2 cup raisins
  • 2 tablespoons white poppy seeds

Directions

Preheat the oven to 400° F and take a nine-inch wide and three-inch deep round cake pan and grease it.

Roast semolina in a saucepan for 10 to 12 minutes. Add oil, sugar, salt, coconut milk, eggs, and 2 1⁄2 cups water to the saucepan and cook until it leaves the sides of the pan, for 10 to 12 minutes.

Add raisins and cook for more two minutes. Pour the mixture into the grease pan and sprinkle with poppy seeds. Bake for 45 minutes.

Swedish Gooey Chocolate Cake Recipe

Ingredients

  • 10 tablespoons unsalted butter,melted and cooled, plus more for greasing
  • 1⁄4 cup plain bread crumbs
  • 2 teaspoons vanilla extract
  • 1⁄4 teaspoon kosher salt
  • 2 large eggs
  • 1 cup sugar
  • 7 tablespoons natural cocoa powder
  • 1 cup cake flour, sifted
  • Whipped cream, for serving

Directions

Preheat the oven to 400°F and grease a nine inch springform pan with butter. Dust bread crumbs on the bottom and sides to coat the pan.

Whisk 10 tablespoons of melted butter with sugar, vanilla, cocoa powder, and salt in a bowl until well combined. Add the eggs one at a time and whisk until smooth. Fold the flour into the batter and pour the batter into the greased pan.

Bake for 10 minutes, until the cake slightly hardens on the top and is loose form within. Transfer the pan to a rack, cool completely, and then chill for an hour. Unmould and serve.
