5 Healthy Pancake Recipes for Fat Tuesday
Fat Tuesday Recipe #1: Carrot Cake Pancake Recipe
Ingredients:
- 1 ¼ cups all-purpose flour
- ¼ cup chopped walnuts, toasted
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¹⁄8 teaspoon freshly ground nutmeg
- Dash of ground cloves
- Dash of ground ginger
- ¼ cup brown sugar
- ¾ cup low-fat buttermilk
- 1 tablespoon canola oil
- 1 ½ teaspoons vanilla extract
- 2 large eggs, lightly beaten
- 2 cups finely grated carrot (about 1 pound)
- Cooking spray
- 3 tablespoons butter, softened
- 2 tablespoons honey
Directions
In a big bowl, mix flour with walnuts, baking powder, cinnamon, nutmeg, cloves, and ginger. Add a pinch of salt.
In another bowl, mix brown sugar with buttermilk, canola oil, vanilla extract, and eggs. Whisk the mixture well.
Now, fuse sugar mixture with flour mixture and stir until moist. Fold in 2 cups of carrots.
Place a non-stick pan on medium heat and grease it with cooking spray. Pour four mounds of batter onto the pan and spread it with spatula. Cook for 2 minutes on each side.
Remove from the pan and serve with butter and honey.
Fat Tuesday Recipe #2: Wheat-Free Pancake
Ingredients:
- 3 cups almond meal
- 1 tablespoon ground flaxseed
- ½ teaspoon sea salt
- ½ teaspoon baking soda
- 3 large eggs
- ¾ cup unsweetened almond milk
- light coconut milk, or milk
- 2 tablespoons extra-light olive oil, walnut oil, coconut oil, or butter, melted
Directions
Mix almond meal, flaxseed, salt, and baking soda in a bowl.
In another bowl, break the eggs and whisk it with milk and oil or butter. Add the flour mixture into the egg mixture and combine thoroughly until moist.
Lightly coat a pan with oil and put it over medium heat. Spoon ¼ cup of batter onto the pan. Cook for three minutes, then flip and cook for three minutes on the other side.
Remove from pan and serve with desired toppings.
Fat Tuesday Recipe #3: Sweet Vegan Pancake Recipe
Ingredients:
- 1 ¼ cups whole wheat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 ¼ cups unsweetened plain soy milk
- 1 tablespoon maple syrup, plus more for serving (optional)
- ½ teaspoon vanilla
- Cooking spray
- Fresh fruit for serving (optional)
- Jam for serving (optional)
- Soy yogurt for serving (optional)
Directions
Take a medium-sized bowl and combine flour, baking soda, and salt. Add soy milk, maple syrup, and vanilla into flour mixture and mix thoroughly. The consistency must be smooth and moist.
Put a pan on medium heat and grease it lightly with oil. Spoon a heap of the batter into the pan and spread it with spatula. Cook for two to three minutes per side.
Serve with fresh fruit, jam, soy yogurt, or syrup.
Fat Tuesday Recipe #4: High-Protein Pancakes with Banana Cream Sauce Recipe
Ingredients
For pancakes:
- ¾ cup whole wheat flour
- 3 ounces vanilla protein powder
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 egg
- 1 tablespoon maple syrup
- ½ teaspoon almond extract
- 1 cup vanilla soy milk (or almond milk)
- 1 tablespoon canola oil
- ¼ cup sliced almonds
- Cooking spray for pan
For the sauce:
- 1 banana
- 6 ounces nonfat vanilla Greek yogurt
For the topping:
- ¼ cup sliced almonds
Directions
Combine whole wheat flour, protein powder, baking powder, salt, egg, maple syrup, and almond extract together in a large bowl. Gradually, pour soy milk and oil into the flour mixture. Add the sliced almonds too.
Place a skillet over medium heat and coat with cooking spray. Take a heaping spoonful of batter and put onto the pan. Spread it evenly and cook for two to three minutes or until bubbles appear. Flip and repeat the process.
Remove onto a plate and set aside.
To prepare the cream sauce, mash bananas in a bowl and add Greek yogurt, mix well. Serve pancakes with banana cream sauce and garnish with sliced almonds.
Fat Tuesday Recipe #5: Apple Ring Oatmeal Pancake Recipe
Ingredients:
- ¾ cup whole wheat flour
- ¼ cup rolled oats
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- ½ banana
- 1 cup soy or almond milk
- 1 large egg
- 1 teaspoon vanilla extract
- 3 apples, washed, cored, and each cut into six slices
Directions
Combine flour, oats, brown sugar, baking powder, cinnamon, nutmeg, and salt in large bowl.
In another bowl, mash banana and add milk, egg, and vanilla. Whisk the ingredients well.
Now, add the flour mixture to the wet mixture and combine thoroughly well. Note that the batter should be on the thinner side.
Heat a pan over medium heat and grease it lightly with cooking spray. Coat apple slices, one at a time, with the batter. Allow the runoff to cease and gently place the coated apple slices on the pan.
Cook for two minutes on each side, until brown. Remove from pan and transfer to a baking sheet. Put it in a preheated 200°F oven to keep warm. Serve with fruits and nuts or maple cinnamon yogurt.
