1. Shrimp Po’ Boy Sliders Recipe

Ingredients:

  • ½ cup whole milk
  • 2 eggs
  • ½ cup all-purpose flour
  • ½ cup finely ground cornmeal
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon dried thyme
  • Kosher salt
  • Freshly ground pepper
  • Vegetable oil, for frying
  • 1 lb shrimp, peeled and deveined, tails removed
  • 12 slider buns
  • Shredded iceberg lettuce, for serving
  • Sliced cherry tomatoes, for serving

For remoulade:

1 cup of mayonnaise
1 tablespoon whole grain mustard
1 tablespoon lemon juice
1 tablespoon Louisiana sauce
1 tablespoon parsley, chopped
2 green onions, thinly sliced

Directions

Whisk milk and eggs together in a large bowl.

In another bowl, mix flour, cornmeal, Cajun seasoning, and dried thyme. Add some salt and pepper to taste.

Dip the shrimps in the milk mixture, then coat them in flour mixture.

Place a large skillet over medium heat. Heat about two inches of oil until shimmering. Place the shrimps gently in the skillet and fry until golden, about two minutes per side. Drain the shrimps on a paper towel-lined plate.

Prepare remoulade by mixing mayonnaise, mustard, lemon juice, hot sauce, parsley, and green onions together.

To make the sandwiches, take a nice dollop of the remoulade and spread it on the bottom of the slider buns. Add the fried shrimps on top of the remoulade with lettuce, and tomatoes. Top with slider bun tops.


2. St. Louis-Style Baby Back Ribs Recipe

Ingredients:

  • ¾ cup packed light brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Kosher salt
  • Pepper
  • 4½ lb baby back ribs
  • ¼ cup Dijon mustard
  • ½ cup apple juice
  • ¾ cup ketchup
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce

Directions

Preheat oven to 275°F.

In a bowl, mix the sugar, paprika, chili powder, garlic powder, onion powder, one tablespoon of salt, and two teaspoons of pepper together.

Next, take a rimmed baking sheet and place the ribs on it. Cover them with the mustard, then sprinkle with ¾ cup of the spice rub and coat evenly.

Pour some apple juice onto the baking sheet. Wrap securely with foil and bake until the meat is tender and easily separates from the bone. Cook for about two-and-a-half to three hours.

In the meantime, whisk ketchup, vinegar, Worcestershire sauce, and remaining ½ cup of spice rub in a medium bowl. Keep aside about ½ cup of the mixture in a small bowl.

About 10 minutes before the ribs are done, heat the grill to medium-high. Grill the ribs and moisten them with the ketchup mixture. Keep turning them occasionally. Cook for about five to six minutes or until the ribs begin to char. When done, cut the ribs into pieces and serve with dips.

Prep tip: To remove the silvery membrane from a rack of ribs, slip a knife under the membrane and lift and slide it around to loosen. Using a paper towel, grab the loosened membrane and pull it off the rack.

3. BBQ Nachos Recipe

Ingredients:

  • 4 slices bacon, chopped into 1-inch pieces
  • ½ red onion, chopped
  • 1 lb ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup barbecue sauce
  • 1 bag tortilla chips
  • 3 cups shredded Cheddar
  • ¼ cup sliced scallions

Directions

Preheat the oven to 350°F.

Sauté the bacon in a large skillet over medium heat. When they are crispy, drain on paper towels. Don’t forget to reserve about two tablespoons bacon fat in the pan.

Sauté some onions until soft and brown. Add ground beef and stir well, breaking the meat up with a wooden spoon. Add salt and pepper for seasoning.

Cook the beef thoroughly. Strew barbecue sauce on the cooked beef and bring it to a simmer. Be careful not to burn the sauce.

Lay the nachos out onto a large baking sheet. Top the chips with the BBQ beef mixture, then grate cheese evenly on it. Bake until the cheese is melted, about eight to 10 minutes. Garnish with scallions, serve warm.


4. Pizza Pull-Apart Bread Recipe

Ingredients:

  • 1 roll Pillsbury pizza crust
  • ¼ cup pizza sauce
  • 4 cloves garlic, minced
  • 1 ½ cup shredded mozzarella
  • ½ cup grated Parmesan
  • ½ cup sliced pepperoni
  • ½ teaspoon dried oregano

Directions

Set the oven to 400°F.

Roll out pizza crust on a floured work surface. Spread a thin layer of pizza sauce on the crust and add little pieces of garlic.

For a clean square, trim the sides. Strew mozzarella and Parmesan all over the pizza sauce. Top it with pepperoni.

Cut the dough into squares and stack on top of each other. Grease a loaf pan and place the dough sideways on it. Bake it for 30 minutes.

The pizza crust must cook thoroughly. When done, put on a plate and serve warm.


5. Cajun Pigs in a Blanket Recipe

Ingredients:

  • 1 can Pillsbury crescent dough
  • 12 oz andouille sausage, cut into 1″ pieces
  • 1 egg, lightly beaten with 1 tablespoon water
  • ½ cup mayonnaise
  • 4 teaspoon Dijon mustard
  • ½ teaspoon Cajun spice mix
  • 2 tablespoons chopped parsley

Directions

Set the oven to 375°F. Take a parchment paper and line half of a sheet pan with it. Set the pan aside.

Next, cut three smaller triangles out of each triangle of the crescent roll dough. Place the sausages on wide ends of the triangles. Roll them until fully wrapped, exposing the cut ends.

Put them on the sheet pan and baste lightly with egg wash. Bake the rolls until golden brown, say for about 10 minutes.

In the meantime, prepare the dip. Take a small bowl, mix together the mayonnaise, Dijon mustard, Cajun spice mix and parsley. Serve the rolls warm with Cajun dip.
