Christmas Breakfast Casserole Recipes

Trisha Yearwood’s Breakfast Sausage Casserole

Serves: 12


  • 1/2 loaf sliced white loaf bread
  • 1 lb fresh bulk pork sausage with sage
  • 2 cups half-and-half cream
  • 10 oz sharp Cheddar, grated
  • 1 tsp dry mustard
  • 1 tsp salt
  • 5 large eggs (lightly beaten)
  • butter (for greasing)


Cut the bread into one-inch cubes. Spread in the bottom of a greased 9-by-13-by-2 casserole dish.

In a medium skillet, brown the sausage over medium heat until fully cooked (and no longer pink). Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread. Top with cheese.

Stir together half-and-half cream, dry mustard, salt, and eggs. Pour this mixture over cheese and bread. Cover the casserole with aluminum foil and refrigerate for eight hours or overnight.

Preheat the oven to 350°F. Bake the covered casserole until set and slightly golden (about 50 minutes). Remove from the oven and allow the casserole to set for 15 minutes before serving.

Amazing Potato Bacon Egg Breakfast Casserole

Serves: 6


  • 8 large eggs
  • 1/3 cup milk
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 10 pieces bacon, cooked and crumbled
  • 2 small Yukon potatoes, finely diced


Preheat oven to 350°F. Spray a 9-inch pie pan with non-stick cooking spray (can use coconut oil instead). Set aside.

In a large mixing bowl, beat together the eggs and milk. Add in the salt and pepper. Stir in the finely diced potatoes. Stir in half of the crumbled bacon and add the rest of the crumbled bacon on top.

Bake for 20 to 25 minutes.

Ham and Cheese Hash Brown Casserole

Serves: 10 to 12


  • 1 pound cooked diced ham
  • 1 (32 oz) package frozen hash brown potatoes
  • 1 (16 oz) container sour cream
  • 2 (10.75 oz) cans condensed cream of potato soup
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups grated Parmesan cheese


Preheat oven to 375°F. Lightly grease a 9-by-13-inch baking dish with cooking spray.

In a large bowl, mix together hash browns, ham, cream of potato soup, sour cream, and cheddar cheese.

Spread into prepared pan. Sprinkle with Parmesan cheese.

Bake for one hour, or until bubbly and lightly brown.

Sausage McMuffin Casserole

Serves: 4


  • 4 English muffins, split
  • 1 1/4 cup milk
  • 1 cup cheddar cheese
  • 4 eggs
  • 8 oz breakfast sausage (cooked and crumbled)
  • salt and pepper


Grease an eight-inch square baking dish. Cut each half of the English muffins into six pieces. Add half of the cubed English muffins in a single layer. Top with half of the sausage and 1/2 cup of the cheese. Layer the remaining English muffins and sausage and 1/2 cup more cheese.

Whisk together the eggs, milk, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole. Wrap the baking dish with plastic wrap and refrigerate for at least one hour, or up to one day.

Bake at 325°F for up to 45 to 50 minutes.
