Christmas is almost here, and what better way to celebrate the holiday season than to bake some of your favorite treats. We all know that we should be limiting our sugar consumption, but everyone needs to indulge a little during the holiday season. When we think of Christmas traditions, one thing comes up time and time again, and that is enjoying a nice cup of eggnog by the fire.

Why not shake up tradition this year by baking your eggnog and eating it as a cookie instead! Just pop them in the oven and let your home fill with the aroma of nutmeg and cinnamon.

Holiday Eggnog Cookies

1 1/4 cups white sugar
3/4 cup butter, softened
2 1/4 cups all-purpose flour
2 egg yolks
1/2 cup eggnog
1 teaspoon vanilla extract
1 tsp ground nutmeg
1 tsp baking powder
1/2 tsp ground cinnamon

Preheat oven to 300 degrees F (150 degrees C).

In a bowl, mix together flour, baking powder, cinnamon, and nutmeg.

In a separate mixing bowl, cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth.

Add flour mixture and beat at low speed until combined. Be careful not to overmix.

Drop teaspoon amounts onto ungreased cookie sheet 1 inch apart and sprinkle lightly with nutmeg.

Bake in preheated oven for 20 to 23 minutes until bottoms turn light brown.

Place on a cooling rack for 5 minutes, and enjoy!

These delicious eggnog cookies will be enjoyed by everyone in the family, and with a hint of rum, it will keep everyone in holiday cheer! These cookies are perfectly soft, chewy, and have just the right amount of eggnog flavor.

Eggnog Frosted Christmas Cookies

2 1/4 cups all-purpose flour
2 tsp baking powder
3/4 cup unsalted butter, at room temperature
1/2 cup packed light-brown sugar
1/2 cup granulated sugar
2 large egg yolks
1/2 tsp salt
1/2 tsp ground nutmeg, plus more for topping
1/2 tsp ground cinnamon
1 tsp vanilla extract
1/2 tsp rum extract
1/2 cup eggnog

1/2 cup butter, at room temperature (1/4 cup salted and ¼ cup unsalted butter)
3-5 Tbsp eggnog
3 cups powdered sugar
1/2 tsp rum extract

Preheat oven to 350 degrees F (175 degrees C)
In a mixing bowl, whisk together flour, baking powder, nutmeg, salt, and cinnamon for 30 seconds, set aside.

In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter, granulated sugar and brown sugar until pale and fluffy. Mix in egg yolks one at a time, blending just until combined. Mix in vanilla extract, rum extract, and eggnog.

With mixer set on low speed, slowly add in dry ingredients and mix until combined, do not overmix.
Scoop dough into heaping tablespoonful’s and drop onto parchment paper lined baking sheets, spacing cookies 2-inches apart.

Bake in preheated oven for 11 – 13 minutes.

Allow to rest on baking sheet several minutes before transferring to a wire rack to cool. Cool completely, then frost with eggnog frosting and sprinkle ops lightly with eggnog.

For the Eggnog Frosting:
In the bowl of an electric strand mixer fitted with the paddle attachment, whip butter until pale and fluffy.
Add in rum extract and 3 tbsp. eggnog and mix in powdered sugar. Add additional eggnog to reach desired frosting consistency.

Now all that is left to do is sit back, light a fire, and enjoy the holiday season while indulging on your eggnog cookies!
