Half Glazed Eggnog Cookies
Ingredients:
- Eggnog cookies
- 1 stick unsalted butter
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 2 1/2 cups confectioners’ sugar
- 2 1/2 all-purpose flour
- a pinch of Kosher salt
Cardamom topping:
- 1 1/2 cups confectioners’ sugar, One teaspoon cardamom
Glaze:
- 2 cups confectioners’ sugar
- 1 cup eggnog
- a pinch Kosher salt
Recipe:
Preheat the oven to 350ºF.
Beat together the butter and eggnog in a mixer. Add the vanilla, confectioners’ sugar, and salt and beat it again. Scrape the sides and bottom of the bowl, add the flour and mix to combine.
Line two baking sheets with parchment paper. Scoop the cookie dough on the baking sheets. Bake for 12 to 15 minutes.
Remove the cookies from the oven and cool completely.
For the cardamom topping, mix the confectioners’ sugar and cardamom in a bowl and whisk to combine.
For the glaze, add the confectioners’ sugar, eggnog, and salt in a bowl and whisk to combine. Before serving drizzle the glaze over half of the cookies and roll the other half of the cookies in the cardamom topping.
Eggnog Cookies with Frosting
Ingredients:
- 1/3 cup softened butter
- 2 tablespoons eggnog
- 1/2 teaspoon rum extract
- 1 cup packed brown sugar
- 4 egg yolks
- 3 cups all-purpose flour
Frosting:
- 1 1/2 teaspoon rum extract
- 1/2teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 2 or 3 tablespoons eggnog
- 4 1/2 cups powdered sugar
- 3/4 cup softened butter
- additional ground nutmeg for dusting
Recipe:
Beat the butter and brown sugar in a large bowl, until light and fluffy. Beat in egg yolks, eggnog and extract. Fold in the flour and mix gradually. Refrigerate covered for at least 2 hours
Preheat the oven to 325°F.
Scoop the dough and place it on the parchment lined baking sheet.
Bake for 13 to 16 minutes or until bottoms are brown. Remove to wire racks to cool completely.
Beat powdered sugar, butter, rum extract, nutmeg, and cinnamon until blended in a large bowl. Add the eggnog and blend it again until it reaches the desired consistency.
Spread over cookies and dust with ground nutmeg. Let the cookies set and then they are ready to serve.
Simple Eggnog Cookies
Ingredients:
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 2 egg yolks
- 1 1/4 cups white sugar
- 3/4 cup butter, softened
- 1 teaspoon ground nutmeg
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
Recipe:
Preheat oven to 300°F.
Mix in the flour, baking powder, cinnamon and nutmeg.
Beat the sugar and butter until light, add the eggnog, vanilla, and yolks. Beat the mixture until smooth.
Add the flour mix to the eggnog mixture and beat it lightly.
Drop the mixture to non-greased cookie sheets. Sprinkle with nutmeg and bake for 20 to 23 minutes or until bottoms turn light brown.
