Energizer Salad to Boost Your Day

Here is another summer lunch or dinner idea which is fast, simple, and will give you an amazing, refreshing nutritional boost. This salad is high in protein, fiber, and nutrients. It contains salmon which is my personal favourite type of fish. Salmon is an oily fish with a buttery-rich flavour and its nutritional value is unparalleled. Salmon contains high amounts of the omega-3 family of essential fats. These fats have been shown to be very helpful in the alleviation of insulin resistance and inflammation while improving blood thinning, plaque stability, and endothelial function.

This salad also contains garlic, cucumber, and dill which can help with water retention, circulation, and blood pressure reduction. Dill is one of my favourite herbs to use in cooking and it has a unique taste. This summer delight contains one whole avocado which is a great source of omega-9 fats. This type of fat can increase the amounts of good high-density lipoprotein (HDL) cholesterol and lower inflammation levels within the artery

Healthy Salmon Salad Recipe

Ingredients

  • 1-1/2lb of salmon fillet cut into small pieces
  • 1 tablespoon of Dijon mustard
  • 1/2 teaspoon of honey
  • 1 Large English cucumber, diced
  • 1 Large ripened tomato, diced
  • 1 Medium avocado, diced
  • 2 tablespoons of chives or green onion, chopped
  • 3 Medium cloves of garlic, minced
  • 1-2 tablespoon of fresh dill, chopped
  • 1-2 teaspoon of lemon juice
  • 1-2 tablespoon of extra virgin olive oil
  • Freshly ground pepper

Directions

Press and mince the garlic cloves and let stand.
In a separate bowl, mix together the cucumber, avocado, tomato, chives, garlic, and dill. Let this mixture stand.
Rub the salmon pieces with lemon juice and pepper.
Place the salmon pieces in a skillet and cook with a small amount of olive oil until lightly browned.
Combine the honey and mustard and add to the salmon, coating fully.
Add olive oil, lemon juice, and pepper to the bowl containing the cucumber mixture, gently toss.
Divide the mixture into 4 separate servings and serve together with the salmon.
