Healthy Eggplant Pizza

New Twist on Eggplant

Pizza has always been the go-to meal for a Friday night party as well as a staple of the American diet. But to satisfy all of your guests, even those who are gluten-free, the typical pizza crust might not work. You could substitute with a gluten-free crust or you can turn the table all together!

With this tasty alternative to a typical pizza crust, you can have all of your guests coming back for more. An eggplant pizza with herbs, spices, sesame seeds, tomatoes and other quality ingredients is a great way to keep things interesting.

The added bonus is that you will get an abundance of nutrients with each mini pizza. Eggplants also are very good sources of dietary fiber, potassium, manganese, copper and vitamin B1. The additional spices and herbs on this nightshade vegetable will make this pizza the hit of any party!

This healthy recipe makes for a nutritious snack, or it can be served as part of a full meal with a salad and grain dish. You’ll be able to get four to six servings and I promise each of your guests will absolutely love it.

Healthy Eggplant Pizza


  • 1 Large eggplant
  • 4 tsp of sesame seeds
  • 4 tsp of dried oregano
  • 4 tsp of dried basil
  • 2/3 cups of olive oil
  • 2 or 3 Large tomatoes, sliced
  • 1 cup of grated organic vegetarian mozzarella cheese


Preheat the oven to 350 degrees Fahrenheit.
Slice eggplant into 1/2-inch slices. Combine dried herbs, sesame seeds and salt.
Brush eggplant slices with olive oil, then coat with the herb and sesame seed mixture.
Put each eggplant slice on a greased baking sheet, then top with a slice of tomato and grated cheese. You can also add olives or other vegetable toppings if you prefer.
Bake in the oven for about 30 minutes or until the eggplant is tender. Serve and enjoy this natural pizza!
Vegan option: Vegans can substitute the cheese with seven ounces of firm tofu. Slice the tofu and marinate it in a mixture of 3 tbsp water, 3 tbsp of tamari and a tbsp of grated ginger.
