Preheat oven to 425°F. In a bowl, whisk the egg white with milk. In another bowl, mix Parmesan cheese and seasoned breadcrumbs.

Cut zucchini into three-inch sticks and dip it into the egg mixture, and then roll in the breadcrumb mixture. On a greased baking sheet, place the zucchini strips and bake for 25 to 30 minutes or until golden brown.

Baked Sweet Potatoes

Fudgy Chocolate Brownies

You can eat these healthy brownies without feeling guilty. The unsweetened cocoa used in the brownies keeps the fat content low.

Preheat oven to 325°F. In a large saucepan, melt margarine and chocolate over medium heat. Add cocoa and cook for a minute.

Add sugar and cook for another minute. At this point, the mixture will form a hard ball. Remove the pan from the heat and cool.

Combine the warm chocolate mixture, egg whites, and egg and whisk to blend all the ingredients. Combine the flour and baking powder and fold the flour mixture in the chocolate mixture. Spoon batter into a nine-inch greased square baking pan.

Bake at 325°F for 30 minutes. Avoid over-baking. Cool on a wire rack.

Marshmallow Popcorn Bars
