Sugar-Free Eggnog Recipes for a Healthy Christmas

An Easy, Sugar-Free Eggnog Recipe

Ingredients

  • 1 12-ounce can coconut milk, at room temperature
  • 1 to 2 packets stevia
  • 1/2 tsp nutmeg (fresh if possible, grated with a Microplane)
  • 1 tsp alcohol-free vanilla
  • 1/4 cup unsweetened almond milk
  • 2 eggs
  • 1/4 tsp cinnamon

Directions

  1. In a blender, combine the almond milk, coconut milk, alcohol-free vanilla, eggs, stevia, cinnamon, and nutmeg. Blend on high speed until the mixture is frothy.
  2. Chill the beverage before serving.
  3. Pour into glasses of your choice and garnish with a dusting of cinnamon and/or a cinnamon stick. Enjoy! Happy holidays!

Sugar-Free Eggnog

Ingredients

  • 5 cups non-fat milk
  • 1-ounce package sugar-free instant vanilla pudding mix
  • 1 packet aspartame sweetener
  • 1 pinch ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp rum-flavored extract

Directions

  1. In a large mixing bowl, add the sugar-free vanilla pudding mix, aspartame sweetener, non-fat milk, ground cinnamon, dash of nutmeg, and rum extract. Mix these ingredients very well with a wire whisk for a minimum of 2 minutes. If this is too thick, add more milk and sweetener and whisk until smooth. Chill before serving.

Homemade Sugar-Free Eggnog (Dairy-Free Option)

Ingredients

  • 1 cup 100% pasteurized egg whites
  • 2 cups heavy cream
  • 3 cups 1% milk
  • 1 Tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3/4 tsp imitation rum extract
  • 1/2 tsp ground nutmeg
  • 1-2 tsp liquid vanilla stevia

Directions

  1. Place all your ingredients into a blender and blend for about 60 seconds.
  2. Scoop off the whipped cream and reserve it for later to top each individual mug.
  3. Taste and adjust sweetener if needed.
  4. Sprinkle with more cinnamon if desired.
  5. Keep refrigerated and serve chilled.

Sugar-Free/Fat-Free Holiday Eggnog

Ingredients

  • 1-ounce package sugar-free instant vanilla pudding mix
  • 1 pinch nutmeg
  • 7 cups non-fat or low-fat milk, divided
  • 2 tsp vanilla extract or 2 tsp rum extract
  • 1 cup fat-free evaporated milk
  • Sugar substitute (to taste)

Directions

  1. In a bowl add the pudding mix, 2 cups milk, vanilla or rum extract, a tiny pinch of nutmeg (if using), and a sugar substitute (to taste). Mix together on low speed using an electric mixer until thickened.
  2. Pour into a large container with a tight-fitting lid and add in 3 cups of milk. Cover with lid and shake vigorously.
  3. Add the evaporated milk and the remaining 2 cups of milk and shake well again.
  4. Chill in the refrigerator and shake again before serving. Enjoy!
