Inside-Out Nachos: Recipes for Your Favorite Super Bowl Snack

Cheese-Filled Nachos Recipe

Ingredients

For the nachos:

  • ½ cup cornstarch
  • ½ cup water
  • ²⁄³ C cornmeal
  • 2 tablespoons butter
  • ½ tablespoon salt
  • Black pepper
  • Oil for frying

For cheese filling:

  • 1 thick slice of frozen or fresh jalapeno pepper
  • ½ cup Cheddar cheese
  • 1 to 2 yellow pear tomatoes or tomato puree
  • 2 to 3 tablespoons water

Directions

Heat the water and butter and pour it in a bowl. Add cornmeal, cornstarch, and salt to the mixture and microwave until warm, about a minute. Mix the ingredients and knead to get a soft dough.

Place a pan on high heat and add oil to fry the nachos. Blend the cheese, jalapeno, and tomato in a blender. Add little water to form a smooth paste.

Roll out the dough, but don’t make it too thin. It must be thick enough to hold the cheese filling. With a cookie cutter cut the desired shapes from the dough, like a circle.

Spoon the cheese filling at the center of the circle and cover it with another circle. Seal the edges so that the filling doesn’t spill out.

Fry the nachos until golden and drain them over a paper towel. Sprinkle with black pepper. The inside-out nachos are ready to serve.

Turkey-Filled Nachos Recipe

Ingredients:

  • 1 pkg taco seasoning mix
  • 1 lb ground turkey
  • 1 teaspoon olive oil
  • ½ can of refried black beans
  • 1½ cups grated Cheddar cheese
  • 22 pieces of sliced jalapeños
  • 22 small squares wonton wrappers
  • Oil for frying

Sour Cream Guacamole:

  • 1 ripe avocado
  • 2 to 3 tablespoons sour cream
  • Garlic, salt to taste

Directions

Heat olive oil and add the ground turkey to it. Break up the meat with a spoon. Drain the meat and add it back to the pan. Season with taco seasoning mix. Stir and add the refried beans. Set the mixture aside to cool.

In another bowl, scoop out the avocado pulp in a bowl. Mash it with a spoon and add salt and garlic to taste. Add two to three tablespoons of sour cream and stir. Set the dip aside.

Add in cheddar cheese to the meat mixture and mix gently. Stuff the meat mixture into the wonton wrapper. Top it with a jalapeño slice. Wet the edges of the wrapper with your finger and fold to make a rectangle. Press the edges to seal.

Fry the wontons until golden, turning only once. Serve hot with the guacamole and salsa.
