Recipe for Crispy Potatoes with Delicious Vegan Nacho Sauce


The potato is hands down the king of vegetables. It is versatile and goes well with any dish. There’s french fries with fish and ketchup, and roasted potatoes or mashed potato with roast—either way, potato is our favorite. And when they come in small, cute shapes, we love them even more. Available in different varieties, some potatoes even have unusual colors. For example, the Blue Swede potatoes found in South America.

Here’s a delicious crispy potato recipe that comes with an amazing vegan nacho sauce recipe. We bet you won’t be able to keep your hands off this tasty snack.

Crispy Potatoes with Delicious Vegan Nacho Sauce


  • 2 lbs of baby potatoes
  • 3 tablespoons of canola oil
  • Salt and pepper

Ingredients for the Vegan Nacho Sauce:

  • 1 cup raw, unsalted cashew nuts, soaked overnight and drained
  • 1/2 jalapeno, seeded and chopped
  • 3 tablespoons lemon juice
  • 1/2 tablespoon of sweet paprika
  • 1/2 tablespoon cumin powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon chili powder
  • 1 tablespoon coarse sea salt
  • 1/4 cup nutritional yeast


Preheat oven by setting the temperature at 450°F. Add canola oil to the potatoes and toss them well with 1/2 tablespoon of salt and 1/4 tablespoon of pepper.

Place a baking sheet inside the oven and spread the potatoes evenly. Roast them for 30 minutes until they turn golden and crispy.

Next, prepare the nacho sauce. Place the cashew nuts, lemon juice, chili powder, cumin, paprika, garlic powder, sea salt, nutritional yeast, and jalapeno with one cup water in a blender and make a puree.

Cook the puree in a two-quart saucepan for about five minutes, keeping the heat on medium-low. Stir occasionally until the contents are warm and fragrant. Transfer it to a bowl and serve with the roasted potatoes.

You can also used it as a dip with tortilla chips, nachos, roasted cauliflower, or anything else you can think of.

Nutrient value: 380 calories, 10 grams of protein, 47 grams of carbs, 18 grams of fat (2 grams of saturated fat), 6 grams of fiber, and 520 milligrams of sodium.
