Curried Vegetables with Almonds Recipe

Ingredients
- 1 yellow or sweet onion
- 2 cloves of garlic, crushed
- 1 cup of water
- 2 carrots, cooked and sliced
- 1 green pepper
- 1 celery stalk, sliced
- 1 Tbsp of curry powder
- 1 Tsp of coriander
- 1 Tsp of turmeric
- 1 Tsp of cumin
- 1/4 Tsp of dry mustard
- 1/4 Tsp of ground pepper
- 1 Yukon gold potato, cooked and cut into chunks
- 3 cups of water
- 2 cups of cauliflower florets
- 6-8 fresh mushrooms, sliced
- 1/2 cup of frozen peas
- 4 ounces of blanched almonds
Directions
Sauté onion and garlic in a cup of water until clear, add carrots, green pepper, celery and spices. | |
Cook over medium heat and stir for 10 min...add more water if required. | |
Add potatoes and three cups of water, cover, and cook for 15 minutes on medium heat. | |
Add the cauliflower and cook another 15 minutes. | |
Add the mushrooms and peas, cook another 10 minutes. | |
Place in large bowl, add almonds on top and serve. |
