Healthy Blueberry Muffins

Ingredients

  • 2 cups spelt flour
  • 2 tablespoons baking powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon poppy seeds
  • 1 cup rice milk or soy milk
  • 4 tablespoons coconut oil
  • 1 egg or egg replacer
  • Rind of 1 lemon
  • Juice of 1 lemon
  • A pinch sea salt
  • 1 cup blueberries

Directions

Combine flour, baking powder, poppy seeds and salt in a large bowl.
Add in milk, egg, oil, sweetener, lemon zest and juice and stir until moistened.
Fold in blueberries.
Spoon batter into lightly oiled muffin tins, and bake at 375°F for 20 -25 minutes.

Yields 12 muffins
