Healthy Blueberry Muffins

Ingredients
- 2 cups spelt flour
- 2 tablespoons baking powder
- 2 tablespoons maple syrup or honey
- 1 teaspoon poppy seeds
- 1 cup rice milk or soy milk
- 4 tablespoons coconut oil
- 1 egg or egg replacer
- Rind of 1 lemon
- Juice of 1 lemon
- A pinch sea salt
- 1 cup blueberries
Directions
Combine flour, baking powder, poppy seeds and salt in a large bowl. | |
Add in milk, egg, oil, sweetener, lemon zest and juice and stir until moistened. | |
Fold in blueberries. | |
Spoon batter into lightly oiled muffin tins, and bake at 375°F for 20 -25 minutes. | |
Yields 12 muffins |
