Healthy Coconut Curry Rice

Ingredients
- 2 cups of brown basmati or jasmine rice
- 3.5 cups water
- 1 can black-eyed peas (drained and rinsed)
- 1 or 2 tsp curry powder
- 1 tsp garlic powder
- 1 tsp Caribbean hot sauce
- 1 or 2 tsp Caribbean spice
- 2 or 3 tbsp organic, extra-virgin coconut oil
Directions
Place rice in stovetop pot with water, let boil. | |
Simmer on low heat until water is absorbed, remove from heat. | |
Stir in peas, spices and coconut oil, fold. | |
Place back on burner without heat for 15-20 minutes. | |
Let stand for 20 minutes. | |
Serve with your favorite grilled fish or chicken breast. |
