Healthy Spinach and Goat Cheese Pizza Recipe

Ingredients

  • 1-2 tablespoon of tomato paste
  • 1 whole grain pita
  • 3/4 cups of chopped spinach
  • 1/3 cup of crumbled goat cheese
  • 1/4 cup of red bell pepper
  • 1/4 cup of chopped mushrooms
  • 2 tablespoons of chopped red or green onion
  • 1 tablespoon of extra virgin olive oil
  • Optional: 1 large tomato

Directions

Spread the tomato paste on the pita.
Top with spinach, pepper, mushrooms, onions, and cheese (and tomato, if you have decided to include it).
Broil on high heat in the oven until cooked to satisfaction
After removing the pizza from the oven, drizzle the olive oil on top of the fully cooked pizza.
