This recipe was inspired from one of my many dining experiences I had when I lived in Singapore. Middle Eastern was one of my favorite cuisines to eat. What I enjoyed most about the different dishes was all the spices. There are so many bold, earthy flavors. To name a few, cinnamon, cumin, coriander and cloves.
These tasty patties may look like they would be a fair amount of work in the kitchen but I’m happy to tell you they’re easy to make. It’s the kind of dish you serve your friends and family at a dinner party.
A few things to know about sweet potatoes before you scoop them onto your fork.
Sweet potatoes have twice as much fiber as regular potatoes; they are ranked low on the glycemic index which is great for diabetics, and they’re extremely rich in vitamin B6 which supports heart health.
Another bonus, a medium-size sweet potato has enough vitamin A to meet your recommended daily requirement and has a strong concentration of vitamins C and E to supplement your body with potent antioxidants. How’s that for healthy?
Sweet Potato Patties with Tahini
Ingredients
- 1 Large sweet potato, cut into quarters
- 3 Small carrots, diced
- 1 Small red onion, finely chopped
- 1 (15-ounce) can unsalted chickpeas (garbanzo beans), rinsed and drained
- 1 Large lemon, squeezed
- 2 garlic cloves, minced
- 1 handful fresh cilantro, chopped
- 3 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1 tbsp coconut oil
- 1/4 cup amaranth flour (set aside on plate for dusting patties)
Instructions
Steam the sweet potatoes and carrots for 35 minutes. Once cooked, add to a food processor and blend until smooth. Add chickpeas and mix together until smooth. Remove the chickpea mixture from processor and put into medium-size bowl.
Mix all ingredients together using a spatula or your hands. Add onion, lemon, garlic, cilantro, olive oil, cumin, cinnamon and sea salt. Combine just enough to form small pancake-like patties. Dust both sides of each patty with flour. Place in frying pan with coconut oil, cook on each side for 10-12 minutes until brown on each side. Drizzle with tahini and serve immediately.
Tahini
Ingredients
- 4 tbsp sesame paste
- 1 Large garlic clove, minced
- 1 Large lemon squeezed
- 1/4 cup water
- 1/2 tsp sea salt
Instructions
Add all ingredients into food processor and mix until smooth. You can always add a little more water to make it smoother. Drizzle over patties and serve immediately.
Mixed Greens with Lemon Dressing
Ingredients
- Mixed greens
- Red pepper, finely chopped
- Cucumber, finely chopped
- Green onions, finely chopped
- 1/4 cup olive oil
- 1 lemon, squeezed
- 1/2 tsp sea salt
Instructions
Put all ingredients into large bowl. Toss with dressing and serve right away with your amazing sweet potato patties.
