Curried Vegetables with Almonds

The holidays can be a tricky time of year for eating healthy. But you don’t have to indulge in sweets and desserts—this healthy recipe is a perfect addition to any holiday meal.

Curried Vegetables with Almonds Recipe


  • 1 yellow or sweet onion
  • 2 cloves of garlic, crushed
  • 1 cup of water
  • 2 carrots, cooked and sliced
  • 1 green pepper
  • 1 celery stalk, sliced
  • 1 Tbsp of curry powder
  • 1 Tsp of coriander
  • 1 Tsp of turmeric
  • 1 Tsp of cumin
  • 1/4 Tsp of dry mustard
  • 1/4 Tsp of ground pepper
  • 1 Yukon gold potato, cooked and cut into chunks
  • 3 cups of water
  • 2 cups of cauliflower florets
  • 6-8 fresh mushrooms, sliced
  • 1/2 cup of frozen peas
  • 4 ounces of blanched almonds


Sauté onion and garlic in a cup of water until clear, add carrots, green pepper, celery and spices.
Cook over medium heat and stir for 10 min...add more water if required.
Add potatoes and three cups of water, cover, and cook for 15 minutes on medium heat.
Add the cauliflower and cook another 15 minutes.
Add the mushrooms and peas, cook another 10 minutes.
Place in large bowl, add almonds on top and serve.
