Mediterranean Gyros

It’s hard coming up with different lunch ideas—especially if you just need it to be quick and easy. Why not go a little Mediterranean this week? Here’s my recipe for Mediterranean gyros, an easy recipe that you can prepare at home and wow all your family and friends with!

I like to keep my lunches healthy so they keep me energized throughout the day, so this healthy recipe has a great source of protein (chickpeas), plus lots of vegetables, heart-healthy olive oil, and one of my favorite antioxidants, garlic.

Try this Easy Lunch Recipe

Ingredients

  • 1 15 oz. can of chickpeas
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 1/2 cup of onion, thinly sliced
  • 1 1/2 cup of red bell pepper, cut into strips
  • 1 1/2 cup of green peppers, cut into strips
  • 1 cup of sliced fresh mushrooms
  • Whole wheat pita pockets
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon of fresh basil
  • 1/4 cup of ripe olives

Directions

Drain the chickpeas and reserve three tablespoons of the liquid.
Place peas, liquid, lemon juice, basil, and garlic into a food processor; blend until smooth.
In a skillet, sauté onions, peppers and mushrooms in the oil on medium heat until soft, then set aside.
Spread two to three tablespoons of the chickpea mixture in a pita and top with the sautéed vegetables, tomatoes, cheese, and olives.
