Noodle Bowl

This Asian-style noodle dish is a terrific way to get vegetables into your diet and your family’s.  This is a simple recipe that can be tweaked to fit most any diet. Use it as a base and get creative from there.

You will need:

  • 1 (8 oz) package thin rice noodles
  • 1 head Boston lettuce
  • 1 cup shredded carrots
  • 1 cucumber
  • 1 avocado
  • 2 cups shredded chicken
  • ½ bunch green onions
  • ¼ cup fresh mint
  • ¼ cup fresh cilantro

Prepare the rice noodles according to the package directions. Rinse with cold water and drain. Set aside. While noodles are cooking, chop up the lettuce and divide it among fours bowls. Place the noodles on top of the bowls in four equal portions.

Place ¼ cup of the shredded carrots into each bowl. Peel and cut the cucumber into 2-inch spears and spread out evenly among the four bowls. Dice the avocado and divide among the bowls.

Layer the shredded chicken over the noodles and then some of the chopped green onions, mint, and cilantro. Serve with a peanut sauce of choice or Quick Kimchi found in stores.

Tomato Soup with Meatballs

You will need:

  • 4 sweet Italian sausages, raw
  • ½ tbsp fennel seeds
  • 1 tbsp olive oil
  • 4 cups tomato soup
  • 2 cups mini pasta shells
  • 1 fennel bulb

Remove the sausage from its casings. Mix the fennel seeds with the sausage meat and form into marble-sized balls. Heat the oil in a pot and cook the meatballs over medium heat for four minutes, or until golden brown. Transfer the meatballs to a plate and set aside.

Remove any excess oil from the pot. Add the tomato soup and two cups of water. Bring this to a boil. Add the pasta and cook over medium heat for three minutes. While the pasta cooks, slice a small piece of fennel from its bottom and remove the green top. The greens will be used as garnish.

Cut the fennel bulb in half, cut out the core, and cut into thin slices. Add the meatballs and fennel to the soup and simmer until the pasta is cooked to your liking. Divide the soup among six bowls; garnish with the fennel greens and enjoy.
