Brown-Bag Recipes: Chicken Salad


  • 2-3 cups cooked and cubed chicken breast
  • 1/8 cup fat-free mayonnaise
  • 1/4 cup fat-free yogurt
  • 1 teaspoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 cup chopped red pepper
  • 1/2 cup black beans, rinsed
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup sweet corn
  • 1 medium-chopped tomato
  • 1/4 cup chopped red onion


In a bowl, blend yogurt, mayo, olive oil, lime juice, and cumin.
In a separate bowl, combine the corn, onion, red pepper, chicken, tomato and beans.
Stir the dressing into the vegetable and chicken mixture.
Serve with a whole wheat pita or in a roll-up using a whole grain tortilla.
