Ingredients
- 2-3 cups cooked and cubed chicken breast
- 1/8 cup fat-free mayonnaise
- 1/4 cup fat-free yogurt
- 1 teaspoon lime juice
- 1 teaspoon ground cumin
- 1/2 cup chopped red pepper
- 1/2 cup black beans, rinsed
- 1 tablespoon extra virgin olive oil
- 1/2 cup sweet corn
- 1 medium-chopped tomato
- 1/4 cup chopped red onion
Directions
In a bowl, blend yogurt, mayo, olive oil, lime juice, and cumin. | |
In a separate bowl, combine the corn, onion, red pepper, chicken, tomato and beans. | |
Stir the dressing into the vegetable and chicken mixture. | |
Serve with a whole wheat pita or in a roll-up using a whole grain tortilla. |
