Healthy Spring Sprout Salad

Ingredients

  • 1 cup mung bean sprouts
  • 1 cup alfalfa sprouts
  • 2 cups baby spinach
  • 2 green onions (chopped)
  • 15-20 almonds (soaked and refrigerated overnight)
  • 1/2 cup dried cherries
  • 3/4 cups extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons water
  • 2 tablespoons honey
  • 1 teaspoon sea salt

Directions

Place the baby spinach in a big salad bowl and top with the mung bean and alfalfa sprouts.
Sprinkle the dried cherries, almonds, and green onions on top of the salad.
For the salad dressing, combine the extra virgin olive oil, apple cider vinegar, water, honey, and sea salt. Mix well and drizzle over each serving of salad.
