Healthy Spring Sprout Salad

Ingredients
- 1 cup mung bean sprouts
- 1 cup alfalfa sprouts
- 2 cups baby spinach
- 2 green onions (chopped)
- 15-20 almonds (soaked and refrigerated overnight)
- 1/2 cup dried cherries
- 3/4 cups extra virgin olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons water
- 2 tablespoons honey
- 1 teaspoon sea salt
Directions
Place the baby spinach in a big salad bowl and top with the mung bean and alfalfa sprouts. | |
Sprinkle the dried cherries, almonds, and green onions on top of the salad. | |
For the salad dressing, combine the extra virgin olive oil, apple cider vinegar, water, honey, and sea salt. Mix well and drizzle over each serving of salad. |
