Looking for an easy, healthy brownie recipe? As a nutritionist, I’m always looking for healthy dessert recipes. This is one of my favorites, because I love beans: they’re a great source of fiber, which helps keep cholesterol healthy. They’re also filled with folate, potassium, magnesium, B vitamins, and molybdenum.
Here is my healthy recipe for bean brownies.

Ingredients
- 1 can (540 ml) of Adzuki or black beans (I use black beans, as they are easier to find)
- 4 eggs
- 2/3 cups of brown sugar or other sweetener
- 8 tablespoons of cocoa
- 1/2-2/3 cup of oil (sometimes I make these brownies and they are really watery, depending on the beans I buy, so I start with a lesser amount of oil first).
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda

Rinse the beans well and put all the ingredients into your food processor and blend well. | |
Pour into the brownie pan and bake at 375°F for 30–35 minutes. |
