So Good, They’re Sinful: Healthy Bean Brownies

Looking for an easy, healthy brownie recipe? As a nutritionist, I’m always looking for healthy dessert recipes. This is one of my favorites, because I love beans: they’re a great source of fiber, which helps keep cholesterol healthy. They’re also filled with folate, potassium, magnesium, B vitamins, and molybdenum.

Here is my healthy recipe for bean brownies.

Healthy Brownies Recipe


  • 1 can (540 ml) of Adzuki or black beans (I use black beans, as they are easier to find)
  • 4 eggs
  • 2/3 cups of brown sugar or other sweetener
  • 8 tablespoons of cocoa
  • 1/2-2/3 cup of oil (sometimes I make these brownies and they are really watery, depending on the beans I buy, so I start with a lesser amount of oil first).
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking soda


Rinse the beans well and put all the ingredients into your food processor and blend well.
Pour into the brownie pan and bake at 375°F for 30–35 minutes.
