Cannoli-Stuffed French Toast Recipe

Ingredients:

  • 1 cup ricotta cheese
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ¹⁄3 cup semi-sweet chocolate chips
  • 2 large eggs
  • ¼ cup heavy cream (or milk)
  • 4 slices French bread
  • 2 tablespoons butter
  • Powdered sugar, for serving

Directions

Mix ricotta cheese, powdered sugar, and vanilla extract. After making a smooth mixture, add mini chocolate chips.

Next, in a large bowl combine eggs and heavy cream together.

Take two slices of bread and spoon the ricotta mixture, about half cup per slice. Gently put one slice of bread on the other with the ricotta mixture in between, like a sandwich. Now, dip the sandwich in the egg mixture, coat it well.

Meanwhile, melt butter in a frying pan. Carefully place the sandwich in the pan and let it simmer, about four minutes each side.

Cut it diagonally and dust some confectioners’ sugar before serving.

Savory Bacon and Crab Bread Pudding Eggs Benedict Recipe

Ingredients:

  • 1 tablespoon butter
  • 3 cups dry bread cubes
  • 1 teaspoon vegetable oil
  • 1 strip bacon, chopped
  • ¼ cup minced onion
  • ¼ cup minced red bell pepper
  • ¹⁄3 cup chicken broth, or more as needed
  • ¹⁄3 cup heavy cream
  • 1 large egg
  • ½ lemon, juiced
  • 1 tablespoon chopped fresh tarragon
  • 1 teaspoon fresh lemon zest
  • 4 ounces fresh lump crab meat
  • Salt and fresh ground pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • ½ tablespoon distilled white vinegar
  • 2 eggs
  • ¼ cup hollandaise sauce
  • 1 pinch cayenne pepper, for garnish

Directions

Start by preheating the oven to 400°F and line the insides of two ramekins with butter and place on a baking sheet.

Next, sizzle the bacon in hot vegetable oil in a sauce pan over medium heat until browned and crispy. Discard the excess oil from the pan. Add onions, cook for two minutes and then add red pepper. Cook for a minute or two. Gently add the chicken broth and heavy cream and cook for two minutes more.

While the chicken-cream mixture simmers, put the bread cubes in a medium-sized cup. Carefully pour the cooked chicken-cream mixture over the bread cubes and mix well so that that bread soaks up the creamy mixture.

Whisk one egg with lemon juice, tarragon, and lemon zest. Add the crab meat, salt, black pepper, and cayenne pepper. Combine thoroughly. Fill up the ramekin bowls with the mixture and bake for 20 minutes.

When done, remove the ramekin bowls from the oven and place a poached egg on each bread pudding. Garnish with cayenne pepper and hollandaise sauce over each egg.

  • 3 slices of bacon, cut into small pieces and fried
  • 2 tbsp Parmesan cheese, grated

First, separate the yolk from the white. Set aside the yolk in a bowl. Whisk the white until fluffy, add cheese and bacon pieces.

Caramel Latte Pancakes Recipe

Ingredients:

  • 2 cups Original Bisquick mix
  • 2 teaspoons baking powder
  • ¹⁄3 cup granulated sugar
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons instant coffee granules or crystals
  • Whipped cream, for serving

Caramel syrup:

  • 1 cup packed brown sugar
  • ½ cup whipping cream
  • ¼ cup unsalted butter
  • Pinch of salt
  • 2 teaspoons vanilla

Directions

Mix Bisquick, baking powder, and granulated sugar in a bowl.

In another bowl, melt butter and add milk, eggs, and instant coffee. Stir the ingredients well until coffee dissolves. Make a smooth mixture. Now, add the dry mixture to the liquid mixture and whisk it with an electric mixer.

Place a medium-sized pan over medium heat and grease it. Add a third of the batter to the pan. Cook the pancakes until the edges are dry and the surface is bubbly, for about three minutes per side.

Next, to make the caramel syrup, mix brown sugar, whipping cream, unsalted butter, and a pinch of salt. Broil it in a pan over medium heat until the sugar dissolves completely and the syrup thickens. Turn off the heat and stir in vanilla. Let it cool down. If the syrup thickens too much, then heat it some more.

Serve the pancakes with caramel syrup and a dollop of whipped cream
